IPA - Black / Cascadian Dark Ale
Aggressively bold, earthy, and intense, Bitter Waitress Black IPA has every right to be as bitter and dark as it wants to be. A medium-full bodied ale loaded with hops and balanced with roasted malts and hints of black licorice.
Fruit Beer
Bandwagon Raz-P-A is brewed with a pale ale, Munich and Vienna malts. Willamette hops are used to contribute mild fruity, herbal, and floral accents and a clean British yeast adds a soft fruitiness. Whole raspberries are added for a second fermentation, giving the beer an intense crimson red color and loads of juicy dry raspberry flavor.

Kölsch
Kölsch is our flagship brand and our lightest offering.
Patterned off of German Kölsch that was originally produced in the city of Köln, Germany. Traditionally, this beer was brewed using a portion of the grain as wheat instead of barley.
The aroma is that of cereal grains with a light floral note at the end. Upon drinking, the flavours subtly take over the mouth leaving very little bitterness. There is a noticeably sweet taste that appears just before the carbonation cleans the palate.
Red Ale - American Amber / Red
Our most complex beer, the Clocktower Red is brewed with a blend of five different types of malt and two types of hops.
Aside from the rich colour, the malts add varying degrees of sweetness: caramel, chocolate, and toffee can all be found in both the flavour and aroma. Perhaps most interesting is the presence of a nuttiness, that presents itself on the nose and mouth.
The hops used in the Clocktower Red are best characterized as citrus or pine flavours. The citrus and pines notes stick around in the mouth afterwards leaving a very pleasant after taste.
Fruit Beer
The Raspberry Wheat is a crisp, refreshing beer with just a hint of raspberry flavour. The flavour is not tart but lightly sweet, reminiscent of summer berries.
The Raspberry Wheat is made with premium Canadian 2-row barley and wheat. Just enough imported Czech Saaz hops are added to give a light floral note to compliment the raspberry flavour.
Bitter - Extra Special / Strong (ESB)
The Wishart’s ESB is in the tradition of a British Extra Special Bitter. ESB’s typically have more flavour, aroma and alcohol than a standard bitter. Our ESB is copper in colour and the nose is a blend of sweet caramel and fruity aromas.
The flavour of this beer is complex. At first taste, sweet caramel and light toffees are overwhelming. As the flavour develops, a mix of fruity, spicy and citrus start to present themselves and eventually take over the sweeter flavours.
IPA - English
This classic English style beer IPA has a rich caramel color. The color is noticeable darker than our English Style Bitter due to the presence of caramel malt. This beer has four unique hop additions giving it a more complex bitterness than that of the other IPA’s; however it does remain highly drinkable and flavorful.
Pumpkin / Yam Beer
THE PUMPKIN ALE CHARACTERISTICS :
It pours dark amber to orange, similar to the colour of roasted pumpkin. The flavour of the beer is slightly sweet, but the pumpkin flavour will then burst forth when left to simmer on the drinkers palette. The aroma of the pumpkin is quite intense. As the beer warms slightly more notes of pumpkin and Autumn spices emerge. It has very little aftertaste, but does leave a dry tingle afterwards. There is real pumpkin added into the mashing process,
which is then added with the hops into the boil.

Stout - Other
A seasonal version of our original Oyster Stout. It is a dark brown, almost black beer in colour with a creamy tan head. The aroma is that of roast coffee & chocolate. The nitrogen added; rather than carbon dioxide, gives the stout a smooth creamy body, making it very easy to drink. The end flavour is has a hint of roast.
IPA - American
TONGUE CUTTER IPA is 100% true to its name! The 2018 TONGUE CUTTER IPA is packed with fresh citrus flavours and aromas making it the biggest IPA the Clocktower has ever produced, in over 22 years craft brewing.
2018 marks the second year that we are canning The Tongue Cutter IPA, which will be available for sale exclusively at our Bank St. / Glebe retail store. Tongue Cutter IPA is made in collaboration and designed with our good friends at Knifewear Ottawa.
TONGUE CUTTER IPA CHARACTERISTICS
Tongue Cutter IPA is a light bodied West Coast Style IPA.
The beer is light in colour and hazy in appearance.
Tongue Cutter IPA is made with West Coast citrus hops.
It is low in bitterness up front, with initial flavours of orange and tangerine. The bitterness creeps up and by finish it completely envelops the mouth. As the beer warms, more flavours reveal themselves to the drinker. This is the most substantial IPA we have ever made. It is much bigger
in taste and flavour in comparison with our staple No.7 IPA.

Lager - Vienna
This is an authentic Vienna style beer. It is brewed with premium imported malt and hops from Vienna. This beer is brewed using the traditional method of German/Austrian brewers and subsequently takes longer to brew then our other beers. The color is a light orange almost golden. It has a pleasant citrus aroma of the nose with hints of caramel. At first taste, the flavors present as citrus and slightly earthy however a small bit of roast or caramel may appear as well. The bitterness is similar to the ESB but much more subdued.
Specialty Grain
White Stout is an original Clocktower Brew Pub “mash up” made from two different styles of beer; a WiT beer and a Stout. It is a based on our traditional Wit beer, as it is brewed with lots of wheat, spiced with lemon peel and lemon dominant hops. The un-malted wheat adds a smooth texture to the beer which highlights it’s citrus elements. The twist in the White Stout comes from the stout portion of the beer. Nitrogen is added to the White Stout to lend creaminess and extra body. The smaller sized nitrogen bubbles in the carbonation, also help to bring the lemon zest to the surface at first taste. Our White Stout is a refreshing and highly drinkable beer made specifically for the first warm days of the Spring season. ABV 4.4% SRM = 1.5 IBU = 15

Clocktower Merry Cherry Porter is based on the original recipe for much beloved CT Porter, first product circa 2007... now brewed with fresh cherries!

Emphasising hop aromas and big flavour without bracing bitterness our Break of Day IPA is a classic New England IPA / NEIPA that delivers a bursting juicy tropical hop experience!
It’s moderate body, bold citrus & mango notes and low bitterness make it a perfect companion on a warm summer day.

Porter - English
The Clocktower Porter is a sweet, dark brown and full-bodied beer. There is an initial citrus and hop flavor right at the beginning of the palette, which gives way to hints of chocolate, caramel and toffee at the finish.
Our Porter is nitrogen infused which holds in it’s unique flavour and aroma, as the beer settles. The Porter does take a little longer to pour, as it has a creamy cascading effect when poured, similar to a classic Irish Stout.
Bock - Hell / Maibock / Lentebock
This dark golden orange colored ale is a lighter form of a traditional bock. Brewing in Germany was outlawed during the warm summer months. Bock’s, in particular, Maibocks would have been some of the last beers to become available until fall. Our May-Bock is lighter in colour and flavour. The aroma is reminiscent of light fruit and spring flowers. The main flavors are honey, citrus, spicy pepper, and fruit. It is a delicately balanced beer between a strong bitterness and a honey backbone.
IPA - Session
Hoppy Frooty-O’s taste profile is as close to a bowl of fruit that the CT brewhouse has ever produced (minus the actual fruit and plus the beer!)
Our new Clocktower Session IPA is brewed with 5 unique strains of hops, each of which impart different fruit and citrus flavours to the beer.
As the beer warms, Hoppy Frooty-O’s reveals hints of fresh apple, lemon, tangerine and melon, in both it’s flavour and aroma.
Despite the generous amount of hops used in the brewing process, there is virtually no bitterness to the beer. Our CT brewer’s have provided just enough malt flavour to balance out the beers abundant hoppy fruit flavours.

Bock - Hell / Maibock / Lentebock
Is Spring Coming Bock – Tasting Notes
Much like Ottawa weather Is Spring Coming Bock teases you in one direction and suddenly shifts. This clean golden ale is light and refreshing on first sip just like a warm spring day or random February days. Light cereal and bready aromas waft through the warm winter air.
Unlike our weather, this bock is very easy to take. The twist just like that random snow storm is a flurry of alcohol, it comes in at 5.7% abv. Just high enough to help forget the slide to work and home. The higher alcohol presents as light fruity flavours and a slight warming after a few sips. Bocks are malt forward beer that are usually very clean. Is Spring Coming Bock is our unique homage to the Maybock style of beer.
Lager - Munich Dunkel
Webster’s Dunkel our very first Lager. IT is based on the Munich Dunkel style. Dunkel means dark so the style is meant to be a clean lager with “dark” flavours. The nose on the dunkel is very light with hints of caramel and toffee. It has a candied apple like flavour on the body. It starts of as a bit of caramel and ends with a finish distinctly apple. Very light in body and very clean tasting. No noticeable bitterness, hop flavour and aroma are very light.
Those looking for a clean beer with more flavour should enjoy the dunkel. The candy apple flavour is very playful with no hint of extra sweetness. And yes, that is our Brewmaster Patrick's dog.

Billy's Goat Brew is a very creamy and smooth nitro stout, with rich notes of dark chocolate and a fresh espresso kick.

Houblons: Azacca (33%), Citra (33%) et Simcoe (33%)
Notes de la brasserie : Au nez, on a droit à un beau mélange de fruits à noyaux et exotiques. Une sorte de jus de fruits à la pêche, ananas et fruits de la passion. En bouche, on commence avec beaucoup de rondeur, grâce à l'ajustement de l'eau et à l'utilisation de malts de blé et d'avoine. L'ananas et la mangue dominent initialement complètement le goût. À mesure que le produit se réchauffe, on remarque également des notes d'agrume (pamplemousse et orange). La gorgée finit sèchement, grâce au faible taux de sucre résiduel et à une amertume modérée.

Brewery notes: On the nose, we get a nice blend of stone and exotic fruit reminiscent of a medley of peach, pineapple and passion fruit juices. The palate starts off with a nice roundness thanks to the fine tuned water profile and the use of wheat and oats. Here, pineapple and mango dominate the flavour profile. As the beer warms, we notice grapefruit and orange notes. Each sips finishes quite dry for the style thanks to low residual sugars and a moderate bitterness.
IPA - Imperial / Double New England / Hazy
Houblons: Simcoe (67%) et Mosaic (33%)
Notes de la brasserie: Au nez beaucoup de fruits tropicaux et d'agrumes. La texture de la bière est riche, très crémeuse. Le goût de la bière est intense : c'est une explosion de saveurs de fruits en bouche : ananas, mangue, fruit de la passion. On retrouve aussi des notes florales, de gomme balloune et de baies variées. L'amertume est modéré, la gorgée finit sur une note fruitée, légèrement sucrée et amer.

Brewery notes: The nose is all tropical fruit and citrus. The texture is very rich and creamy. The palate on this is intense; pineapple, mango, passionfruit… We also get more floral/sweet notes, namely bubble gum and mixed berries. Moderate bitterness with each sip ending with a taste of sweet fruit.
IPA - Imperial / Double New England / Hazy
Houblons: Mosaic (60%) et Citra (40%)
Notes de la brasserie: Les fruits exotiques dominent complètement le nez de la bière. La mangue s'exprime particulièrement en bouche, accompagnée ensuite par des fruits à noyaux et des agrumes (orange et zestes de lime). Le corps de cette bière est riche et l'amertume finale demeure assez longtemps pour masquer le niveau d'alcool et le sucre résiduel. Dangereusement bonne et facile à boire!

Brewery notes: Exotic fruits dominate the nose completely. Mango shines through particularly on the palate, accompanied by stone fruit and citrus (orange and lime zest). The body of this beer is rich and its bitterness remains long enough to mask the alcohol level and residual sugars. Dangerously good and easy drinking!

Brewery notes: A blast of tropical fruit punch and citrus on the nose. The malt and water profiles along with the carbonation level allows us to get an extremely creamy texture. On the palate, again, a powerful medley of exotic fruits dominated by notes of mango and finishes on more subtle citrus and berry notes.

Notre petite favorite à la brasserie ;) Le nom de la ville de Munich (dérivé de Munichen) se traduit en anglais comme “by the monk” (donc Des Moines). Cette lager allemande traditionelle est, selon nous, une des meilleures bières pour les pairings bouffe! Avec un faible taux de sucre lui amenant une petite rondeur et une finale sur la baguette française, elle est tout aussi désaltérante.
A brewery favourite ;) The name Munich was taken from the word Munichen, meaning “by the monk” (therefore, Des Moines). This traditional german lager is, if you ask us, one of the better food pairing beers out there. With very low residual sugar rounding things out and notes of french baguette, this beer is just as much a thirst quencher.

Brewed with a combination of 7 different German malts, it presents notes of toasted bread, nuts and dark chocolate chocolate. This lager has a thin body making it highly drinkable. The finish is dry, thirst quenching with a light bitterness. A perfect lager for winter months.

This medley creates a mild bitterness, making for a well-balanced, smooth and fresh beer. Top-fermentation provides a complex aroma of higher alcohols and esters, making the amber round and full-bodied.
Its colour and a light touch of caramel on the palette are the result of malts which are kilned – a drying process done at high temperatures.
The dense, creamy head comes from naturally occurring proteins in the malts.

You have to respect anyone who pursues a cause with passion. Even though the cause may not exactly be to your liking. That’s certainly the case with Temperance Willie, known to his mom as William Horace Temple. Willie successfully led the fight against alcohol sales in west-end Toronto for more than three decades. It wasn’t until 1994, years after his death, that residents of a few west-end neighbourhoods voted to change the law. To honour these brave souls, and anyone else who just enjoys a great pint, we created Temperance Willie. This Prohibition-era Session IPA has a hint of tropical fruit and a floral hoppy finish.

Introduced in Ireland in 1740, Porter beer gets its name from the popularity it had among the porters in the big ports. Today, we pay tribute to all those porters and, also, to the entire import-export industry that so marked the Old Port of Montréal. This dark beer, brewed from crystal , chocolate and black malt, is reminiscent of the flavours of old with an aroma of intense and hoppy roasting.

You’ve heard them all: “Count your pennies.” “The penny dropped.” “Two pennies to rub together.” The small copper coin gave us many a saying. But here’s the question: now that it’s gone, have thoughts gone up to a dollar? There’s one pleasure at least that doesn’t cost a pretty penny, and it’s this lovely Copper Ale. A nicely balanced beer, it is brewed with a subtle blend of noble hops, malts and rye which provides a spicy taste. The finish leaves a drier note in the mouth. At least that’s our two cents worth.

We brewed this Double Dessert Stout with tons of toasted coconut, dark chocolate, graham crackers, lactose, and just the right amount of vanilla. It all comes together in a rich roasty stout with toasty coconut up front, balanced out by bitter chocolate, sweet lactose, and a boozy warmth. Literally a Nanaimo bar in a glass.

It's summer! And that means porch sitting with a fine beverage. We used traditional Czech Lager malts and hops to give this zesty blonde beer a pilsner-vibe. It was fermented with a very clean and crisp Norwegian Kveik farmhouse yeast blend. Red fruit on the nose with a refreshing finish.

Our take on a German-style Oktoberfest beer, lagered for seven weeks for our first annual Sparktoberfest celebration. A delicious, malty lager with a beautiful amber hue is best served in a stein for ultimate enjoyment.

This lively sour beer first hits with a delightful blast of raspberry from the super ripe whole raspberries and finishes with a slight lemony twist by way of fresh lemon zest and lemon juice. Dragon fruit adds an intense red colour to an already red, juicy and ridiculously fun beer.

The joys of endless scrolling! But don't scroll past this excellent hazy IPA, brewed with Mississippi Mills Pilsner malt as well as a touch of wheat and oats for a lightly creamy body. The second release from our oak foeder is Lulu, a porter-like beer that was fermented for six months with a blend of Belgian and Brettanomyces wild yeasts. It was then bottle conditioned all summer long.
This black, rich beer has notes of oak, dark-roasted coffee, and English biscuits. A firm brett backbone and soft carbonation balance out the small amount of residual sugar. Perfect for sipping by the fire after a hard day of nothing much at all.

Jeanne d’Arc, or Joan of Arc, is considered a heroine of France and was a feisty and clever military strategist. Known by her nickname, "the Maid of Orléans" (La Pucelle d'Orléans), she was certainly a strong woman ahead of her time and is well deserving of the namesake boulevard that runs through our community. We dedicate this beer to honour our Orléans roots and to strong women everywhere. Jeanne d'Ark is a creamy and delicious oatmeal stout with pronounced chocolate and coffee on the nose, a dense tan head, slight bitterness on the tongue followed by a smooth finish. Battle the autumn evening chill with a glass of this saintly beverage.

2018 Gold Medal winner at the Ontario Craft Brewing Awards. A cucumber wheat beer? There's nothing cooler when it comes to this fruit, so we said 'Why not'? We hand-peeled, cubed and dry-hopped this american wheat beer with 190 english cucumbers. The result is a refreshing ale reminiscent of cool, fresh rain, a slight grassiness, emboldened by a hint of pepper and citrus.

Recent Gold Medal Winner for European Pilsner at the 2019 Canadian Brewing Awards! Same great beer, now in a smaller format! Available on tap and in 355mL cans, this lager is golden in colour with an assertive hop flavour, spicy floral notes and crisp, refreshing finish that pilsners are known for. We went old school using all Saaz hops, but the stray in us gives it a slight haze character. Make sure you Czech this German out, as we went all Pilzen on the malt.

This double dry-hopped pale ale delivers reckless hooks of Sabro and Galaxy hops, delivering a juicy uppercut to your senses. Intoxicating aromatics and flavours of citrus, pineapple, cantaloupe and coconut will leave you weak in the knees, but the lower ABV is sure to let you go at least a few rounds.

Farmhouse Ale - Grisette
When loads of plump juicy raspberries step in to meet our first-ever grisette, little did we realize the path our beer would take. 50 Shades of Grisette is as enigmatic as it is delicious. We plunged headlong into this old-style of beer, and learned the grisette's true flavourful proclivities when paired with berries. The result pushes the boundaries of pure palate pleasure.
Where Belgian saisons developed as restorative beverages for tired farmhands working the fields, the grisette was brewed to quench the thirst of those working in the mines.
The name grisette literally means "little gray" and refers to either the gray stone that the miners dug through, or the gray-dressed women who served the ale.
Light in body and low in alcohol, this grisette is a little bit of naughty and a whole lot of nice. Brisk, tart, light and dry, the ingredients used have come together in a true climax of bright and refreshing qualities, yet still has a complex flavor that is easy to drink.
Perfect pairs include moules frittes or a nice, soft cheese, but is a welcome three-some to charcuterie.

Our blueberry saison is tart and dry with a naughty whisper of berry sweetness that will keep you coming back for more. One Friday night, between midnight and 2 a.m., we added 330 lbs of blueberries to our saison, hummed the theme song to Emmanuelle, dimmed the lights and let them get it on. From the same fools that brought you Moistly Mosaic IPA, we spared no expense with this egotistical monster of a beer. Double Impeachment is orange in colour with a fluffy off-white head that sits as boldly atop the beer as a comb-over trying to fight the laws of nature on a windy day. We weren't conservative with the flavours as huuuge aromatics of tropical, peachy and apricot goodness ooze from the glass due to the reckless amounts of Citra and Simcoe dry hops that were cast in the fermenter over two rounds (no need for a re-count). Juicy, assertive tartness, and dry finish make this our boldest IPA to date. Grab this beer while you can, it won’t be around for a second term
Kellerbier / Zwickelbier
A kellerbier? Qu'est-ce que c'est? It's a young German-style lager, which translates to "cellar beer." Traditionally, the cold-aging period is shorter which makes the hop character more pronounced, and the beer is cloudier in appearance. We think this hazy lager is a real live wire, with subtle fruity aromatics, smooth mouthfeel, and rich malt flavour. Don't run, run, run, run, run, run, run away from this beer, it may not last too long!

After years of studying the secret art of hops, this black IPA leaps out of the shadows and attacks the senses like a flying kick to the face. Darker than a fifth degree black belt, Black Eye combines a subtle roast character with a wallop of tropical, fruity hops. Never underestimate the element of surprise. 6% ABV, 42 IBU. This mean IPA was brewed in the hoppy dojo of Stray Dog Brewing Company in collaboration with Ottawa's own Alain Moussi, star of the Kickboxer Trilogy.

Northern Lite is our homage to growing up on good-ole easy-drinking Canadian beer, but with our Stray Dog twist. But don’t confuse it with one of those ‘big guys’ beers – ours is unfiltered yet refined. Kinda like us.

Le Normandie is a refreshing, unfiltered, hazy saison. Hints of white pepper, lemon and banana are prominent on the nose. This french-inspired beer is our homage to a long gone, but not forgotten Orléans landmark.
The motel was a place for weary travelers to rest. It was also a gathering place for locals to hang out at the bowling alley, eat at the restaurant, and home to many dances and community events.

Medium bodied with moderate carbonation, 12 years of brewing really shows with this great pale ale.

Brewed using 6 different specialty malts, 5 spices and fresh pumpkin puree, this Pumpkn Spice Dark pours an opaque dark chocolate brown, showcasing a creamy tan head that lingers.

Named for Ottawa's fabled beer train, rumoured to be buried somewhere beneath Lebreton Flats at the former site of Canadian beer baron E.P. Taylor's Bradings Brewery, Lost Train is full-bodied with notes of rich chocolate, roasted coffee and dark grains. Ottawa-grown organic oats contribute a deliciously silky smoothness.

This lager was brewed with locally grown 2-row malt from Barn Owl Malt and heritage corn from Against the Grain Farm.
IPA - Imperial / Double
Like the legislative tactic for which this beer is named, Filibuster invites you to sit back and relax. Just don’t plan on anything productive happening for awhile. Loaded with juicy hop flavour, tropical aroma and still refreshing despite a considerable malt body, this double IPA will get you talking.

Brewed with Nova Scotia sea salt, this beer is tart, refreshing and brimming with vibrant fresh fruit.
With over 1,500lbs of fruit, this beer was fruited at a rate of more than 1.5lbs/gallon.

The perfect Winter companion. The Lowertown Dubbel is a formidable, strong, complex beer that is modeled after Western-European monastery beers known as “Dubbels”.
A deep ruby red in colour with a creamy off-white head. Rich malty, dried fruit flavours and will finish with a smooth, warming texture. As mentioned in the serving notes, take your time drinking this as more of the rich, complex notes will become present as the beer warms.
Makes an ideal after-dinner drink or will pair well with beef stew and carbonnade, wild game, brisket, or Lowertown’s Kale & Seed salad and Hickory-Smoked Chicken Wings.

The El Camino Cerveza takes Bavarian brewing tradition of Caribbean/Mexican Lagers we know today to make a full-flavoured lager at the Lowertown Brewery in Ottawa.

This is Lowertown’s first beer using Vermont Ale yeast and it’s a big one. We’ve come up with a full-bodied, smooth beer that’s loaded with flavour from a special blend of American hops. Abundantly fruity with some floral and herbal notes to round it out, this New England style Pale Ale is complex and will continue to develop different aromas as it warms in your glass.
Pair with citrussy vinaigrettes, sweet mustards, curries, roast chicken, and smoked meat.
Grodziskie / Grätzer
Also known as the Lowertown Grätzer.
Made with a grain bill of 100% oak smoked wheat malt. We’re bringing in another traditional beer style originating from Grodzisk, Poland.
Sometimes referred to as “Polish Champagne”, this style is a dry, non-filtered, highly-carbonated session beer highlighting the flavour from the oak smoked malt.
Pairs excellent with seafood. Can be used for cocktails (think of it like an oak smoked club soda).

After a long Winter, it’s finally time to sit on a patio with something refreshing.
The Lowertown Cherry Beer is modeled after the Belgian Kriek, a style of beer that uses fresh cherries aged directly with the base beer. Our interpretation is something that shows the sweet and tart character of cherries, but still light and refreshing. As the beer warms, the fruity aromas of cherries, raspberry, strawberry, and Riesling grapes show a bit more.
Aroma: Fresh tart cherries, sweet dark cherries, Riesling, citrus zest, honey, fresh baked bread

Rye Beer
Using as much malted rye as our brewing system could handle, we made something truly unique for Lowertown. While German roggenbier’s (rye beer) are already a rare style to begin with, we decided to make our own rye beer that would be appropriate for the start of patio season.
Rich notes of rye bread are noticeable right away with more body to the mouthfeel compared to your average blonde ale. Drink cold, serve fresh, and enjoy the sunshine.
Goes well with the Lowertown Poutine, Kettle Chip Nachos, Smoked Meat Sandwich, Warm Garden Pasta, but also a generally good beer to have alongside food.

Vêtue d’une robe rouge grenat, et coiffée d’une mousse crème-fouetteuse, elle offre un nez de sucre d’orge, enveloppé d’un fruité de pamplemousse. Sous notre palais, ce nectar souffle le vent de fraîcheur d’une amertume de houblon soutenue. La brise s’éternise en arrière-goût, laissant la douceur du malt, revenir timidement, apposer sa bise. Une bière digne de son inspiration, les India Pale Ale (IPA) de la Côte Est américaine.

Our original brewery in Toronto’s historic Distillery District, known as “Tankhouse #3” was built in 1879 as a storage building for bulk spirits waiting to be filled into barrels. It was in this building in 2003 that our Tankhouse Ale was born. Now made with all organic ingredients, we use an abundance of organic hops and five different organic malts to produce a rich, fiery pale ale, copper-red in colour, and truly satisfying in flavour.
Lager - American Amber / Red
Our organic barley comes from the Great Plains of Canada. I had the opportunity to go and meet the farmers that grow this organic grain for us, and they are amazing people. These fine folks have taken one step back, and are doing things the right way. This is an American-style craft lager brewed with pale and amber malts, and a whole lot of American west coast hops to give it a wonderful character that’s certified organic. All of the organic barley malt, hops and yeast come from west of the 100th Meridian–thus the name. It is a truly Canadian craft brew that combines the “best of the west” ingredients, a unique recipe and classic Mill Street smoothness.

Our Nitrogen-charged Cobblestone Stout is a smooth traditional Irish-style stout served with that familiar creamy pour. With a deep roasted, smoky palate and a crisp, lingering hop note to finish, this is a stout lover's stout. This classic pub ale is a gift from our brewers to you.

Porter - English
A whimsical design that is another winning Nitrogen-charged combination from our brewery. Fantastic cold weather beer, this porter has been a wintertime favourite at our Toronto pub since 2009. Using the same widget can technology as our Cobblestone Stout, this beer is now available to drink at home as well. The use of porter styles to make flavoured beers is a classic signature of North American craft breweries, and I think our Vanilla Porter is one of the best. Understated and complex, the character of this beer come from vanilla. My dad used to grow orchids, and now I do too in a greenhouse at home. Friends who have followed my career in the brewing industry since 1986 laughed when they realized that I had finally made a beer out of orchids! Funny where inspiration comes from!
IPA - Session
This beer is really hoppy but not bitter. It is an ale and a lager. It is juicy, herbal, floral, smooth, crisp, and doesn't taste like anything else. It is a sessionable version of a non-sessionable style. Hopped? Confused? Once you try it, you'll get it. It is deliciously straight forward.

A remarkable wheat beer infused with a blend of Orange Pekoe and Earl Grey teas. It pours a light amber colour and will charm you with its sublime tea flavour and subtle lemon twist. A truly Canadian take on one of Europe’s newest beer styles.
Pumpkin / Yam Beer
Appearing in the fall this devilishly delicious ale is brewed with real pumpkin and generous amounts of spice. this smooth medium bodied amber ale is made with a blend of 5 malts, 6 spices, unmalted wheat, pure vanilla extract and pumpkin in the mash. its spicy aroma and hints of ginger and clove leave a lingering "pumpkin pie" aftertaste.
Wheat Beer - Witbier / Blanche
Mill Street Belgian Style Wit is a refreshing beer made with a unique blend of ingredients. The soft texture and pale colour comes from the use of wheat, coriander, orange peel and our special yeast and produce the complexity and depth of fruity flavours contained within the glass. This beer is unfiltered. The resulting cloudiness gave rise to the term Wit, or White beer.

Introducing our first certified organic IPA - the Hazy Organic IPA; brewed with two certified organic US-grown hop varieties, Sultana and Amarillo hops. These hops deliver a bouquet of tropical, citrus, floral, and pine aromas. The beer is fruity and features west coast pine character, robust bitterness, and a smooth mouthfeel.
Blonde / Golden Ale - Other
This thirst-quenching “export style” brew is crafted the way domestic blonde ales were made 100 years ago. The natural sweetness of the malt dominates this smooth ale, making it – what we alternately call the “Ultimate Hockey Beer” or the “Ultimate Cottage Beer” (depending on the season).
Märzen
A fall staple, this "festbier" is brewed for fall celebrations, the best known being the Oktoberfest in Munich. Ours take on the style has a soft, malty aromatic nose and a rich copper colour capped with a large creamy white head. at 5.5% it will keep you warm on a cool autumn evening.
Lager - American
Is it possible to be both subtle and forward at the same time? To be both bold and reserved? This lager is a hybrid between a traditional light lager and juicy IPA. Not quite an IPL (or a cold IPA) it's a brew all of it's own.
Porter - Coffee
This unique porter is rich and robust, imparting an intense coffee flavour. And yes, it’s made with real roasted Balzac’s beans in every batch!
Wheat Beer - Witbier / Blanche
White Space. Calm in a busy world. Brewed with camomile flowers, coriander and Mediterranean blood orange, this beer is very, very mellow. Intentionally cloudy due to our use of wheat in the recipe, this unfiltered beer has a creamy texture and a lightly dry and softly bittersweet orange finish. Relax, we’ve got this.
Pilsner - Other
Organic Pilsner is a full-flavoured German lager crafted with traditional ingredients. This brilliantly, light golden beer features a long lasting white head. French Strisselspalt & German Hersbrucker hops provide classic noble hop aroma – a delicate balance of floral, spicy, herbal and subtle citrus notes. The finish is crisp and malty with just enough bitterness to entice you to take another sip.
IPA - Session
After seeing people’s reaction to the limited-edition Rodeo Monk Belgian-style IPA, I brewed Welterweight Session IPA to offer the same big hop aromas and delicate fruitiness with a reduced overall bitterness. This feisty white session IPA delivers hoppy Belgian-style IPA qualities at a much more reasonable 4.8% abv, making Welterweight a beer that you can sit on a deck and drink all summer long – and that is exactly what I plan to do!

Combination of herbal, floral and fruity IPA hops aromas with an underpinning of light peardrop sweetness. Lightly sweet palate that is quite soft and textured due to wheat malt use. Long, complex finish with notes of apricot, pears in syrup and tropical fruit but finally finishing dry.

Originating as a cask-only version of our Tankhouse Ale, Tankenstein is a dry-hopped IPA with full body and matching bitterness. It is a perfectly balanced ale with caramel and biscuit malts complementing the dryness of US grown bittering hops but with a massive over-lay of American Cascade hops being added to the tank during ageing to “dry-hop” the beer and give it a wonderful perfumey character. Grapefruit and piney resinous tones are the main contribution of the Cascades and make this a truly classic American-style IPA. It’s ALIVE!!!!!!

Brewed with a blend of strains isolated from Kveik, a non-purified yeast used in traditional Norwegian Farmhouse brewing and intensely dry hopped with Citra and Cashmere and a little bit of juniper. Farmhouse Ale - Saison
For the Saison Tropicale we used a good amount of Rye and Oats to improve the mouthfeel and complexity of the spicyness of the Saison yeast. We adjusted the water with 5 mineral salts to accentuate the flavours we wanted. Finally we dry hopped the beer with juicy & fruity hops. This beer is quite dry however the mouthfeel is quite pleasant because of our grain bill strategy. Tastes and aroma of cantaloupe, pineapple, passion fruit, lychee and guava fill your mouth and nose all culminating with a refreshing, spicy and slightly tart finish.
IPA - Imperial / Double
ISG is the granddaddy of our Rye Guy IPA. More grain! More hops! The result is an incredibly flavourful, yet balanced Imperial IPA. There is a big malt flavour up front which presents in the form of rich caramel and serves to balance the high bitterness of a beer weighing in at 90 IBUs. The result is a nice, lingering, spicy taste on the tongue. And at 9.1% ABV, this is definitely going to make you super!

Hoppy, crisp, light, and refreshing, this lager hides no faults and delivers the goods in one fell swoop.

Today’s IPA has essentially lost its identity, so we decided to let you draw the conclusions on this one. Hops: Cascade for bitterness, Sasquatch and BRU-1 for dry hopping
Malt: Patagonia Extra Pale, Vienna, Golden Naked Oats and Flaked Wheat.
We call it an ISA because it has a Belgian year and malt profile, but the style follows closer to American Hopping regimes both in bitterness and dry hopping. Where this beer is light in malt body and alcohol content it makes this beer more sessionable than a typical pale ale.
Aroma: Big notes of pear, followed by bubblegum, pineapple and cantaloupe... Maybe reminiscent of a pinot gris.
Taste: A light malt body with hints of biscuit, some slight oat nuttiness and honey and has a mild hop bitterness.
Lager - Mexican
This Cerveza pours a bright, sunshine-yellow hue with a slight haze, reminiscent of a hot summer afternoon. The nose is greeted with a burst of zesty citrus notes, dominated by fresh lemon and lime. A subtle hint of briny sea salt dances in the background. Crisp and refreshing, tangy lemon and bright lime flavours. The Vancouver Island sea salt adds a nuanced complexity, without overpowering the citrus notes. Light and lively mouthfeel with a crisp dry finish.

Perfectum is a dry stout with a pleasant note of chocolate in its aroma, a thick, creamy head, and a roasted, malty flavour. A sweeter beer than most, Perfectum has minimal hop and floral notes. It has mild carbonation and a medium finish that can be avoured, but doesn’t overstay its welcome.

We added 20lbs of freshly peeled and diced ginger late in the boil for a unique taste and aroma. It’s a roundhouse kick of flavour.
A ginger spiced ale, it’s a lone operator among a series of expendable beers. Ideal for long Canadian winters, or any time you need to get away from the boring and predictable.
While still a pale ale, this beer comes in at the upper range of the SRM colour scale for this type of beer and features a deep amber hue.
A medium carbonation gives it a foamy head that helps highlight its rare flavour. Slight hints of citrus and spices on the nose that complement the spicy ginger taste. The finish is light and clean.
The Lone Wolf McAle is another offering that uses only a single hop variety. This allows the spicy ginger flavour to be dominant, while providing the full complexity of hop flavouring.
IPA - American
Known to northern peoples since beer was first brewed, spruce beer has been a source of comfort and nutrition, allowing easy, and tasty, access to crucial vitamins thanks to the inclusion of spruce tips in the brewing process.
We added Colorado Blue Spruce tips late in the boil to bring out the essential oils that flavour the beer and give it a nutritional punch. Versions of this brew have helped ward off scurvy, keeping sailors, hunters, and explorers alive, including Captain Cook himself. If you need a beer to keep you alive, Cranshaw’s your boy.
Thanks to its unique ingredients, this beer unsurprisingly features a resinous, piney taste that is both crisp and fortifying. The Blue Spruce is noticeable both on the nose and the flavour of the beer, but thanks to the properties of this additive, it doesn’t linger on the finish.
With a low IBU rating, it balances an herbal quality with only subtle fruity notes that are more common in IPAs.
Not as dark as some spruce beers, ranking an 11 on the SRM (at 40, the beer is black). This means it has an amber colour, darker than a golden pale ale, but not so much as a brown ale.

Forest Ridge Fire Road is a pale ale brewed with premium German Vienna and Munich malts. A blend of hops create a citrus, grapefruit, melon, and mango aroma. Unique is the Gargoyle hop which has been revived by an organic hop farm near Clearlake, California. Yummy!

Like Blou Amber, Papa Lou is a rare find. A friend to many and giving to all, Lou reminds us of the importance of humanity and taking life as it comes. It doesn’t hurt that he rides a Phat bike :). BLou Amber is a tribute to friends and finding fun deep is Larose forest. This beer was brewed with a variety of crystal malts to create a deep amber color and a rich caramel, honey taste.

Chauncey is a hoppy, well-attenuated British ale with a a gorgeous golden hue. It has a slightly toasty malt finish and spicy, sweet citrus hop aroma and flavour. A gentlemanly bitter finish asserts the pallet and reminds us that Chauncey is to be revered as much as it is to be enjoyed.

It’s like homemade pumpkin pie with whipped cream. But better, because it’s beer.

IPA - New England / Hazy
Combines a copious amount of hops in the whirlpool and dry-hopping to create a beer with low bitterness and a sessionable ABV, but a bold aroma and flavour. A zesty and complex aroma leads into a bright flavour, finishing clean and with mild bitterness and a hint of malt sweetness.
IPA - American
A classic West Coast IPA with a modern twist. A moderate bitterness is complemented by malts that bring out a soft and slightly sweet, fruity grain character. This, paired with Pahto, Chinook, Simcoe, and Citra hops, pay homage to the classic West Coast IPA while also bringing a juicy element of tropical fruit. Slightly hazy, highly aromatic and flavourful, and very crushable.

"Our inspiration for this beer comes from our family who have been farming in Bristol, Quebec since 1925. This 150 acre farm has seen a lot of change over the years but still remains in the family. We first started out with dairy cattle and now are farming soybeans and hay. This stout offers a balance of roasted malts and residual sweetness."

Radler first became popular in 1922 in the town of Deisenhofen, Germany. The beverage was an instant favourite with the local cyclists travelling from Munich. 40 years prior, Ottawa's first bicycles were imported in 1882 from England at a price of $300 each by George A. Mothers ill, founder of the Ottawa Bicycle club, the oldest and one of the largest clubs in Canada. We first made this beer in 2014 to celebrate the 20th Anniversary of Pub Italia."

Historical Beer - Dampfbier
The first steamboat on the Ottawa River was the sidewheel paddle-steamer Lady Colborne. Starting in 1832, this 100 foot long passenger steamer worked on the Ottawa between Aylmer and Fitzroy four times a week in each direction, for the seven months that the river was open each year.
Dampfbier (German for steam beer), is a rare centuries-old style, and was traditionally known as a beer for the common folk. Brewed with German weizen yeast, this all malt brew has hints of clove and a mild hop finish.

Our inspiration for this beer comes from the storied lumber industry on the Ottawa River, and the massive log booms that would be towed downstream to the sawmills. These log booms contained hundreds of pine trees and became most well known with the iconic image of a broken boom on the back of the Canadian One Dollar Bill. We brew this beer with an abundance of four different hop varietals, to provide complex and assertive aromas of pine and citrus.

There have been many times when the internet has helped me find a new style, become aware of a new trend or formulate need a new recipe and this is one of those times. Out of San Francisco a new style is emerging, the brut IPA, a bone dry and aromatic pale beer with very little bitterness. Without a local example (until after it was brewed) I turned to the internet for help. Sure enough, it did not let me down. I would not say this is 100% to style it came pretty close and it produced All Hail the Internet IPA!

Like its namesake, this session IPA is an enigma. You'll be drawn in by its scent - a satisfying hop aroma, mimicking that of a big, bold IPA. On closer inspection, you'll find the hops aroma provide an enjoyable flavour, and approachable bitterness. It has a refreshing, low alcohol content while maintaining a certain calculated ruggedness. This urban woodsman is a very palatable, easy drinking summer beer!
Pale Ale - American
This American Pale Ale is loaded with hop flavour and aroma from lots of late additions and dry-hopping. While the citrus and floral flavours and aromas dominate, the toasty flavours of the malt are strong enough to support them.
Blonde / Golden Ale - Other
This is not your typical all-American blonde ale. An easy-drinking, malt-oriented beer with mild citrus and floral hop flavour and aroma from American hops. A bready, toasty malt flavour and slight fruitiness from the English yeast dirty up this blonde. Enjoy!

Brown Ale - English
Our brown ale is a brown with bite, at 6% it is stronger than the traditional brown ales. With its smooth body, inventive hopping, and deep roasted flavours, it’s so well balanced that it’s hard to detect the slight increase in alcohol content. It’s a beer that makes it hard to say no to a second.
Cream Ale
Traditionally cream ales were made by ale brewers trying to simulate lagers. Many of these brewers added flaked corn to the recipe to give it a smoother, creamier taste, hence the name "cream ale". Ashton cream is made with a combination of grains, these include pale malted barley, carastan malt, and wheat flakes. The beer has a light golden colour, is moderately hopped, and has a creamy mouth feel. Using sazz hops for aromatics, imparts a slightly floral nose and may cause pilsner drinkers to think they have just ordered their favourite Czechoslovakian pils. This is a great beer for people that are not convinced that they like the traditional British ales, but want a premium beer with a north American flare.

Stout - American
We are very proud of our award winning stout! It's full bodied flavour infuses the subtle warmth of bourbon soaked vanilla beans with a smooth malt base. This popular brew will submerge your palate in pillows of comforting rich flavour.
IPA - English
First brewed in England for troops in India during the late 1700s. To withstand the voyage, IPAs were tweaked Pale Ales that were much more malty, boasted a higher alcohol content and were well hopped. It is believed that troops were served watered-down versions of the beer while officers and the elite enjoyed it at full strength. Over the decades, alcohol content lowered due to taxation so less need for malt and hop presence to keep beer balanced.
Hopstravanganza is a traditional style English IPA, brilliant pale color with flavor and aroma citrus notes up front. Bitterness starts softly yet sharpens quickly towards the end...and it lingers.

Over the years the Ashton Pub has always been a destination for men and women who serve our country. Many a song has been sung and a glass raised over stories told inside the Old Mill walls. Black Stone Ale celebrates the sacrifices made by our armed forces while at the same time give. back to show our thanks. To show our gratitude, fifty cents from each litre brewed of this pale ale will go to the Black Stone Association. We feel privileged to be able to help our special forces and cherish the friendships we have made in our pubs. Cheers!
